Queen’s favourite dessert is shaped like the English flag

The Queen’s former chef, Darren McGrady, has revealed that the Queen’s favourite dessert is a Frambroises St George, which he describes as “a sort of raspberry fool shaped like the English flag”. Mr McGrady says that he would make the dessert using raspberries picked from the gardens of Balmoral Castle in Scotland. He also noted that he once spotted the Queen picking berries from the grounds herself.

He said in a video for Delish: “I walked across [the estate] and saw the Queen and Princess Margaret picking berries and I couldn’t believe it. The Queen picking berries in the raspberry cages!

“Later in the night the raspberries were on the table and the Queen said ‘can you make a dessert tonight using those berries?’

“For her it must have been so much fun to share with all the family the berries that her and Princess Margaret picked for dinner that night.”

The dessert is very simple to make, you need a rectangular dish, raspberries, heavy cream, sugar, whipped cream and vanilla extract.

Simply puree half the raspberries to a pulp and strain to remove the seeds. Whip the heavy cream with the sugar and vanilla extract, then fold in the pureed raspberries.

Arrange the remaining raspberries into a large red cross in the dish and lay another layer of raspberries on top. Divide the raspberry fool mixture into the four corners of the dish. Then, pipe whipped cream along the edges of the red cross.

According to Mr McGrady, the Queen is very particular about her fruit and will not eat them if they are out of season.

He said: “She had strawberries and raspberries every night in summer and she loved it. But if you sent strawberries up to the Queen in January, it is like ‘off with your head, off to the tower. I don’t want them out of season’.

“When they are in season and they are freshly picked at Balmoral, or the apples at Sandringham or the peaches at Windsor – that is what was important to the Queen.”
