‘I made a pizza dedicated to King Charles in time for Coronation’

Award-winning pizza chef Emiliana Scarpa used her encyclopedic knowledge of niche ingredients and dough to craft a pizza worthy of a monarch. Ms Scarpa, from Cagliari in southern Sardinia, unveiled her work made in collaboration with bakery genius Graziella Frau which they dedicated to and named after King Charles just days before his Coronation. The artisan pizza is the result of a careful study of ingredients paying tribute to the UK sovereign’s life-long work on the environment and love for organic food.

While the recipe by Ms Scarpa shows a passion for Sardinian delicacies, the pizza chef also poured her love for the Firm into the dish.

Despite living in Italy, a country that ditched its monarch after the end of World War 2, the pizza chef said it is “impossible” not to be a fan of the British Royal Family.

She told Express.co.uk: “You can’t not be a fan of the Royal Family, it’s almost as if it is everybody’s family – both because of its historical importance and because it allows us to dream. The Royal Family has both an institutional side and a human side.”

Ms Scarpa added the Firm is weaved into the fabric of Britain and you “can’t look at the UK without thinking about the Royal Family”.

The award-winning pizza chef also confessed she doesn’t just like the institutional side of the Firm, but also loves reading about its members and their lives.

Among the royals she likes and follows are the Duke and Duchess of Sussex, despite their decision to step back from their senior roles in the Firm and relocate to California.

Referring to the legal drama in which the Duchess starred for several years before marrying Prince Harry, Ms Scarpa said: “I follow Meghan in Suits! I like all of the royals. At the end of the day, this is a family and so at times we identify with them, or we see that they also have some issues.

“The perfect family doesn’t exist, there is always some discussion and upset going on. Sadly, they are very exposed to the public eye, so their personal matters become everybody’s matters.”

Speaking before the historic event, Ms Scarpa said she will “absolutely” watch the Coronation on Saturday, and shared that the service will be shown at the restaurant where she works, Sea Flower – the same location where she first unveiled her King Charles pizza to the public.

Speaking about her artisan pizza, the expert said her aim was to create a product in line with Charles’s “green” and sustainable mindset.

It was particularly important for her to use only local and sustainable products as part of the Sardinian heritage, beginning with the dough, made with semolina from the Italian island and chlorophyll extract.

As for the toppings, she said: “I asked people to bring me typical and peculiar ingredients, including sheep mozzarella – a product made only in the city of Nuoro – and the pompìa – a citrus fruit that only grows in Sardinia.”

To create a “Sardinian garden” for Charles in the middle of her pizza, Ms Scarpa used cardoons, wild artichokes, local tomatoes and Italian herbs, which she topped with waffles made with pecorino cheese shaped like the island where she lives.

Finally, she stuffed the Neapolitan-style crust topped with toasted pine nuts with a cream made with sheep ricotta and pecorino cheese.

Part of what makes the pizza “royal”, though, Ms Scarpa said is the majestic crown made by Ms Frau with the traditional Sardinian bread, known as pintau, normally baked for special events and ceremonies. The crown bears a stark resemblance with the St Edward’s Crown used during coronations in England since 1660.

The idea for a pizza dedicated to Britain’s current sovereign originated in September when, after Ms Scarpa triumphed in a renowned competition with another pizza, she pledged to come up with her next high-profile recipe in time for the Coronation.

The pizza chef explained she likes to come up with recipes inspired by and dedicated to famous people, and given her love for the Royal Family and the fact the Memorial Rodolfo Sorbillo competition was taking place in Naples, the kingdom of pizza, she thought to enter the contest with a pizza fit for a sovereign called Queen Elizabeth.

While she had crafted the recipe before the passing of the monarch, the competition took place on September 19, incidentally the same day of the late Queen Elizabeth II’s funeral.

Recalling how her hands were “shaking” as she presented her work at Villa Imperiale [Imperial Villa], not just because of the importance of the competition and the location but also due to the poignancy of the day, Ms Scarpa said: “I had wanted to create something for our Queen – because Elizabeth II wasn’t simply the Queen of British people, she was ‘the’ Queen”.

To pay tribute to the sovereign’s passing, the pizza featured decorations in black, the colour of mourning, and royal gold.
